You can attribute the instrument on a second staff or edit a law to play the notes in pizzicatto when the change you choose appear.
 
For example : you can make a law where a crossed note play with the pizzicatto sound.

If you don't want it to change the aspect of notes, you can add a "Txt" effect in the law editor (the first square in effect parameters). And you click on the notes you want to use a new instrument like this new example...

There are pizzicato instruments among the strings, but the challenge is how to change to and from them and their equivalent bowed instruments.
 
In addition to the methods described by AJOURDANE, the other way to achieve your goal is to create two cello staves, one with all the bowed notes, and one with all the pizzicato notes and merge them, making the rests on each stave invisible for those measures where it is not playing.  This method may not be worth the effort if the pizzicato notes are few; it is more useful in cases of extended pizzicato passages.
